A specialty coffee is evaluated by the Specialty Coffee Association (SCA) based on several criteria, including fragrance, aroma, flavor, acidity, finish, body, balance, uniformity, clean cup, sweetness and overall impression. To be considered special, a coffee needs to receive a score between 80 and 100 points.
A specialty coffee is differentiated by its cultivation under specific conditions, selection of high-quality beans, artisanal roasting and distinct flavors, while traditional coffee may be mass-produced, with less attention to the details of cultivation and processing, resulting in a less flavorful flavor. complex and varied.
To be categorized as “special”, the coffee must follow the SCA – Specialty Coffee Association scale, obtaining at least 80 points in the classification, in addition to 100% purity of the beans, that is, free from primary defects.
Coffee designated as “gourmet” falls into the same group as “superior” and “extra strong” coffees, which are classified below “special”. This classification follows the Coffee Quality Program (PQC) prepared by ABIC, where the gourmet must be classified with a grade above 7.3, the superior with a grade between 6 and 7.2 and the extra-strong between 4.5 and 5 ,9.
These varieties refer to the different types of coffee beans grown, each with unique characteristics of flavor, aroma, body and acidity. Some common examples of coffee varieties include Catuaí, Catuaí Vermelho, Catuaí Amarelo, Bourbon, Mundo Novo, Geisha, among others. Each variety can be grown in different regions and altitudes, further influencing its sensory characteristics.
The grains are produced by producers in Espírito Santo associated with Nater Coop. Each package includes a QR Code to track the product, providing detailed information about its origin.
Pronova coffees are roasted on demand, ensuring that customers receive the product with the maximum freshness possible.
Pronova coffees are graded by professional Q-Graders, following the international criteria protocol of the Specialty Coffee Association (SCA).
Following storage recommendations, the coffee has a shelf life of 1 year (see packaging), but it is recommended that the product be consumed within 4 months.
We do not yet offer this product.
For a light drink, we suggest 3 heaped tablespoons (+/- 50g) + 700ml of heated water;
For a full-bodied drink, we suggest 4 heaped tablespoons (+/- 80g) + 700ml of heated water.
But feel free to do it however you prefer, according to your taste.
To keep your Pronova coffee delicious for longer at home, we suggest:
– Store the whole grains until shortly before use (if purchasing the product in grains);
– Use an airtight container, such as a glass jar, to protect from moisture, light and air;
– Keep it in a cool, dark place and away from heat;
– Avoid freezing coffee; - Try to consume within a few weeks to maintain freshness.
